以扳倒井第九车间窖池中的窖壁窖泥为研究对象,以窖壁黄水线为界,上下分别取样混合,分析检测其感官、水分、pH、铵态氮、有效磷、腐殖质和梭菌数量,同时进行窖泥样品的液态发酵蒸馏试验,蒸馏液经过气相色谱仪、气相质谱联用仪和液相色谱仪定性定量的综合分析,结果表明使用时间越长,黄水线以下部分的窖壁窖泥老熟的情况越好,其中的梭菌数量相对越多,杂菌越少。这证明在浓香型大曲酒的生产发酵过程中,黄水对窖泥的老熟,对窖泥微生物的驯化,起着重要的作用。
以扳倒井第九車間窖池中的窖壁窖泥為研究對象,以窖壁黃水線為界,上下分彆取樣混閤,分析檢測其感官、水分、pH、銨態氮、有效燐、腐殖質和梭菌數量,同時進行窖泥樣品的液態髮酵蒸餾試驗,蒸餾液經過氣相色譜儀、氣相質譜聯用儀和液相色譜儀定性定量的綜閤分析,結果錶明使用時間越長,黃水線以下部分的窖壁窖泥老熟的情況越好,其中的梭菌數量相對越多,雜菌越少。這證明在濃香型大麯酒的生產髮酵過程中,黃水對窖泥的老熟,對窖泥微生物的馴化,起著重要的作用。
