以扳倒井第九车间窖池中的窖壁窖泥为研究对象，以窖壁黄水线为界，上下分别取样混合，分析检测其感官、水分、pH、铵态氮、有效磷、腐殖质和梭菌数量，同时进行窖泥样品的液态发酵蒸馏试验，蒸馏液经过气相色谱仪、气相质谱联用仪和液相色谱仪定性定量的综合分析，结果表明使用时间越长，黄水线以下部分的窖壁窖泥老熟的情况越好，其中的梭菌数量相对越多，杂菌越少。这证明在浓香型大曲酒的生产发酵过程中，黄水对窖泥的老熟，对窖泥微生物的驯化，起着重要的作用。
