阿西玛氏法测定大曲蛋白分解力中规定“若出现10支试管均无沉淀现象,则说明大曲蛋白分解力较强,可将5%样品溶液稀释10倍”,对“10支试管均有沉淀现象,则说明大曲蛋白分解力较弱”这一现象,没做具体要求。针对中高温大曲蛋白分解力较弱这种情况,从稀释干酪素溶液浓度和增加大曲溶液浓度两方面进行试验,探讨影响大曲蛋白分解力的因素,选择合适的测定大曲蛋白分解力的条件,以便能真实反映大曲蛋白分解力的相对大小。

It's stipulated in Aarthi Mars method of determination of the power of Daqu protein resolution that if the 10 test tubes were no precipitation phenomenon when the power of Daqu protein resolution is strong, we can diluted 10 times of the 5%sample solution to get the result.The power of Luzhou-flavor Daqu protein resolution is weak,but there is no specific method when the 10 test tubes all have precipitation.This article test from two aspects to explore the factors affecting the determination of Daqu protein resolution power,one aspect is dilute the casein solution concentration ,another is increase the concentration of Daqu solution.So we can choose a suitable method for the determination of Daqu protein resolution power to obtain a relatively accurate conclusion of it.
