Bird’s Nest Raw Material%Stewed Bird’s Nest%Ready-To-Eat Canned Bird’s Nest%Saliva Acid (N-Acetyl Neuraminic Acid)%HPLC%Similarity Evaluation of TCM Chromatographic Fingerprint
目的:建立燕窝中唾液酸的分离分析方法,考察燕窝原料(去除杂质的干燥燕窝)、炖煮和加工成即食罐头前后唾液酸的含量变化。方法:燕窝经过磷酸水解,使唾液酸(即N-乙酰神经氨酸)从唾液酸糖蛋白的结合状态游离,用高效液相色谱法测定唾液酸的含量,应用《中药色谱指纹图谱相似度评价系统》评价燕窝3种样品的指纹图谱,比较3种样品的唾液酸含量变化。结果:燕窝原料的唾液酸含量为9.898%,经炖煮或加工成即食罐头后,唾液酸的含量分别为9.921%,9.913%,略高于原料。结论:燕窝加工成即食罐头后其唾液酸含量与直接炖煮的接近,略高于燕窝原料,提示应用现代工艺将燕窝加工成即食罐头,唾液酸保存较好。
目的:建立燕窩中唾液痠的分離分析方法,攷察燕窩原料(去除雜質的榦燥燕窩)、燉煮和加工成即食罐頭前後唾液痠的含量變化。方法:燕窩經過燐痠水解,使唾液痠(即N-乙酰神經氨痠)從唾液痠糖蛋白的結閤狀態遊離,用高效液相色譜法測定唾液痠的含量,應用《中藥色譜指紋圖譜相似度評價繫統》評價燕窩3種樣品的指紋圖譜,比較3種樣品的唾液痠含量變化。結果:燕窩原料的唾液痠含量為9.898%,經燉煮或加工成即食罐頭後,唾液痠的含量分彆為9.921%,9.913%,略高于原料。結論:燕窩加工成即食罐頭後其唾液痠含量與直接燉煮的接近,略高于燕窩原料,提示應用現代工藝將燕窩加工成即食罐頭,唾液痠保存較好。
목적:건립연와중타액산적분리분석방법,고찰연와원료(거제잡질적간조연와)、돈자화가공성즉식관두전후타액산적함량변화。방법:연와경과린산수해,사타액산(즉N-을선신경안산)종타액산당단백적결합상태유리,용고효액상색보법측정타액산적함량,응용《중약색보지문도보상사도평개계통》평개연와3충양품적지문도보,비교3충양품적타액산함량변화。결과:연와원료적타액산함량위9.898%,경돈자혹가공성즉식관두후,타액산적함량분별위9.921%,9.913%,략고우원료。결론:연와가공성즉식관두후기타액산함량여직접돈자적접근,략고우연와원료,제시응용현대공예장연와가공성즉식관두,타액산보존교호。
Objective:To establish the separation and analysis methods of sialic acid in bird’s nest and investigate the content changes of sialic acid in raw material(dry bird’s nest after removal of impurities)and processed products of bird’s nest.Methods:Sialic acid(that is N-acetyl neuraminic acid)in bird’s nest was free from the combination of sialic acid glycoprotein through phosphoric acid hydrolysis. The content of sialic acid was determined by HPLC,and the evaluation was made on the fingerprints of three samples using theSimilarity EvaluationSystemforChromatographicFingerprintofTCM,and the content changes of sialic acid were compared. Results:Sialic acid content of bird’s nest raw material was 9.898% and which was 9.921% and 9.913% after process by stewing and making into canned bird’s nest,which was a little higher than the bird’s nest raw material.Conclusion:The content of sialic acid of processed bird’s nest was slightly higher than that of bird’s nest raw materials. It is indicated that sialic acid content can be better preserved in the ready-to-eat canned bird’s nest produced with modern technology.
