实验教学是食品化学与分析教学的重要组成部分，实验教学改革的目的是培养大学生的创新精神和实践能力。本文以介绍优化实验教学体系与内容、改革实验教学方法与手段、加强实验室建设和管理、实验考核方式的创新等为手段，实现了学生创新能力与创新意识的提高。

Experiment teaching is an important part of food chemistry and analysis teaching. The purpose of experiment teaching reform is training students'spirit of innovation and practical ability. This paper introduced some methods,of which optimal experiment teaching systems and contents,reform experiment teaching methods,enhanc-ing laboratory construction and management and changing experiment evaluation mode,to improve students'ability and spirit of innovation.
