为分离产蛋白酶能力较强的菌株,利用酪蛋白培养基,对醇化烟叶上分离到的细菌进行了定向筛选,得到了降解蛋白质能力较强的菌株24株,对其蛋白酶活性的测定表明:PE1菌株的蛋白酶活性最高,达到156.25 U/mL。将PE1的粗酶液用于烟丝处理,烟丝蛋白质的分解率随着处理浓度的提高而增加,烟丝抽吸品质也有所改善,粗酶液最适浓度为40~60 U/g。

In order to isolate the bacterial strains with strong ability to produce protease, we carried out an oriented screening of bacterial strains isolated from the alcoholized tobacco leaves by casein medium, and obtained 24 strains with stronger ability to de-grade protein. The testing results indicated that the strain PE1 had the highest protease activity, reaching 156.25 Um/L .The crude protease solution of PE1 was used directly for cut tobacco processing.It was found that:when the treatment concentration increased , the degradation rate of protein in cut tobacco rose, and the smoking sensory quality of cut tobacco also was improved;the best treat-ment concentration was 40~60 U/g.
