以西红柿为主要原料,辅以大豆膳食纤维,通过单因素和正交试验,研究保健型大豆膳食纤维番茄酱的最佳工艺配方。结果显示:当白砂糖添加量为15%,魔芋胶添加量为0.3%,大豆膳食纤维的添加量为0.6%时,所得番茄酱呈酱红色,凝胶性好,酸甜适口,具有番茄酱应有的风味,可溶性固形物含量为30%,是一种低能量、具有营养保健功能的低糖果酱。
以西紅柿為主要原料,輔以大豆膳食纖維,通過單因素和正交試驗,研究保健型大豆膳食纖維番茄醬的最佳工藝配方。結果顯示:噹白砂糖添加量為15%,魔芋膠添加量為0.3%,大豆膳食纖維的添加量為0.6%時,所得番茄醬呈醬紅色,凝膠性好,痠甜適口,具有番茄醬應有的風味,可溶性固形物含量為30%,是一種低能量、具有營養保健功能的低糖果醬。

The formula of healthy tomato paste with soybean dietary fiber is studied through the single factor and orthogonal tests.The results show that the best formula is as follows:the amount of sugar,konjac gum and soybean dietary fiber is 15%,0.3%,0.6% respectively.The tomato paste is bright red,as well as good gel property and sweet and sour taste.The soluble solid content of the product is 30%,which is a low-energy,healthy and nutritional low-sugar fruit jam.
