Based on the actual situations of in-depth adjustment of liquor-making industry in China, distilleries strive for transformation urgent-ly. In the transformation process, appropriate pits maintenance&fermented grains storage could greatly conserve the force for the production afterwards. In this study, the solutions to appropriate pits maintenance and fermented grains storage were introduced for reference according to actual production data.
