测定了裂褶菌子实体中碳水化合物、蛋白质、脂肪、灰分、水分、粗纤维、黄酮、矿质元素、维生素和氨基酸含量.结果表明,碳水化合物、蛋白质、脂肪、灰分、水分、粗纤维含量分别是71%,7.6%,0.2%,18.1%,3.1%,1.44%;黄酮含量为0.53%;矿质元素Ca,Fe,Zn,Cu,Mn,Mg,Na,K,Pb,Se的含量分别是186.6,18.0,4.5,0.23,2.7,14.2,13.27,781.2,0.63,0.003 3 mg/100 g;维生素B1、维生素B2、维生素C、烟酸和β-胡萝卜素的含量分别是0.06,1.01,0.16,9.8,0.074 6 mg/100 g;测得的17种氨基酸中,7种必需氨基酸含量占氨基酸总量的40%,以天冬氨酸和谷氨酸的含量较高,分别达0.61%和0.89%.研究结果显示,裂褶菌具有对人体有益的营养成分.
