为开发山茶花资源及进一步了解山茶花的氨基酸组成分布及其营养价值,以山茶花的花瓣和叶片为材料,采用碱提酸沉法提取其粗蛋白,用盐酸水解后,用氨基酸自动分析仪对山茶花的氨基酸进行了分析,并通过氨基酸比值系数法对其营养价值进行了评价.结果显示:山茶花叶片中各种氨基酸的含量均高于花瓣,花瓣和叶片中氨基酸总量的质量分数分别为12.66%和32.01%,其中人体必需氨基酸种类齐全,占氨基酸总量的45.73%和43.55%,且组成比例符合世界卫生组织( WHO)/联合国粮农组织( FAO)推荐的必需氨基酸模式;此外,在山茶花的花瓣和叶片中,药效氨基酸的含量分别达到氨基酸总量的63.82%和64.64%,鲜味氨基酸含量分别达到氨基酸总量的23.14%和25.09%,花瓣和叶片的氨基酸比值系数分( SRC)分别为63.1和63.7,第一限制氨基酸均为蛋氨酸+半胱氨酸.表明山茶花蛋白质有较高的营养和药用价值,开发前景广阔.
為開髮山茶花資源及進一步瞭解山茶花的氨基痠組成分佈及其營養價值,以山茶花的花瓣和葉片為材料,採用堿提痠沉法提取其粗蛋白,用鹽痠水解後,用氨基痠自動分析儀對山茶花的氨基痠進行瞭分析,併通過氨基痠比值繫數法對其營養價值進行瞭評價.結果顯示:山茶花葉片中各種氨基痠的含量均高于花瓣,花瓣和葉片中氨基痠總量的質量分數分彆為12.66%和32.01%,其中人體必需氨基痠種類齊全,佔氨基痠總量的45.73%和43.55%,且組成比例符閤世界衛生組織( WHO)/聯閤國糧農組織( FAO)推薦的必需氨基痠模式;此外,在山茶花的花瓣和葉片中,藥效氨基痠的含量分彆達到氨基痠總量的63.82%和64.64%,鮮味氨基痠含量分彆達到氨基痠總量的23.14%和25.09%,花瓣和葉片的氨基痠比值繫數分( SRC)分彆為63.1和63.7,第一限製氨基痠均為蛋氨痠+半胱氨痠.錶明山茶花蛋白質有較高的營養和藥用價值,開髮前景廣闊.

It was aimed to research and develop the Camellia japonica L.resources, to further study the nutri-tional value and the amino acids composition of Camellia japonica L.The petals and leaves of Camellia japoni-ca L.were used, the crude protein was obtained from these materials using alkali extraction and acid precipi-tation method, then hydrolyzed by HCl and analyzed by automatic amino acid analyzer.Its nutritional value was evaluated by amino acid ratio coefficient; The experimental results showed that various amino acids con-tent of leaves were higher than petals.The total contents of amino acids in petals and leaves were up to 12.66%and 32.01%, including 7 of them were essential to human being, and the essential amino acids ac-counted for 45.73%and 43.55%, respectively.Which was conformable with the WHO/FAO recommended model.In addition, among the total amino acids of petals and leaves, the medicinal amino acids accounted for 63.82%and 64.64%, and the umami tasty amino acids accounted for 23.14%and 25.09%, respectively. The score of ratio coefficient were 63.1 and 63.7 in petals and leaves, separately.With amino ratio coeffi-cient, methionine and cysteine were the first limiting amino acids of petals and leaves.Based on the results, it was concluded that Camellia japonica L., its protein had higher trophic and medicinal value and a vast develo-ping prospective.
