为探求 K326中上部烟叶最适宜的烘烤工艺模式,研究不同烘烤温度与升温速度对 K326中上部烟叶烤后品质及等级结构的影响.结果表明,T2处理为最佳烘烤工艺,即中部烟叶变黄期温度39~42℃、湿球温度36℃;定色期以平均2 h 升温1℃的速度提高到温度55℃、湿球温度37~38℃;干筋期温度68℃、湿球温度40℃.上部烟叶变黄期温度38~42℃、湿球温度36℃;定色期温度47~55℃、湿球温度38℃;干筋期温度68℃、湿球温度41℃.T2处理的烟叶橘黄,油分多,身份适中,色度强;烟叶总糖、还原糖、烟碱含量适中,内在化学成分更加协调;感官质量香气量足,香气质细腻,烟气醇和度、舒适性最好;烟叶中上等烟比例、均价、正组烟叶比例提高.说明在烘烤过程中对温湿度及升温速度的调整是有效的,能有效改善烟叶内在品质,提高烟叶工业可用性.

In order to explore the optimum curing technique of middle and upper leaves of K326,the effects of different curing temperature and humidity on quality and grade structure were studied.The results showed that the tobacco leaves of treatment 2 had high appearance quality.The temperature of middle part tobacco leave getting yellow is 39—42 ℃;web bulb temperature 36 ℃;during the colority stage the temperature raised 55 ℃ by the speed of 1 ℃ every 2 h;web bulb temperature 37—38 ℃;dry stem stage the temperature is 68 ℃;web bulb temperature 40 ℃.The temperature of upper part tobacco leave getting yellow is 38—42 ℃;web bulb temperature 36 ℃;during the colority stage the temperature is 47—55 ℃;web bulb temperature 38 ℃;dry stem stage the temperature is 68 ℃;web bulb temperature 41 ℃.The tobacco leaves of treatment 2 are with orange,enough oil,moderate thickness,strong colority, coordinate chemical components with moderate sugar and nicotine contents,best sensory quality with elegant and sufficient aroma, mellow and comfortable tobacco gas,and highest the ratio of mid-high grade leaves,average price and the ratio of positive group tobacco.So the treatment 2 was the optimal curing technology.Meanwhile,the results illustrate that adjusting temperature and humidity and heating rate would improve tobacco leaves quality and industrial usability during bulk curing process.
