以葡萄糖为标准品,利用苯酚-硫酸法测定了山西老陈醋中多糖含量,采用分光光度法分析了老陈醋清除DPPH·的能力,并与常用抗氧化剂BHT进行了比较。结果表明:山西老陈醋中多糖含量为30.63 g/L,RSD为1.90%(n=3)。对DPPH·的清除率,随老陈醋用量的增加而增大,且呈一定的量效关系。0.4mL老陈醋与1.0 mL质量浓度为0.2 mg/mL的BHT对DPPH·的清除率相当(60.0%),山西老陈醋具有较强的DPPH·清除能力。

The polysaccharide content of Shanxi mature vinegar was determined with Phenylhydrate -Sulfuric acid. The Shanxi mature vinegar capacity of Scavenging DPPH· was detected with spectrophotometric method, which were compared with the common antioxidants BHT. The results demonstrated that the Shanxi mature vinegar polysac-charide content was 30. 63 g/L, and RSD was 1. 90% (n=3). The capability of scavenging DPPH· was depended on the polysaccharide content, and it performed the certain dose-response relationship. 0. 4mL mature vinegar and 1. 0 mL 0. 2 mg/mL BHT presented the equivalent capability of scavenging DPPH· (60. 0 %), and Shanxi mature vinegar possessed good capability of scavenging DPPH·.
