为了从近江牡蛎中高效而简便的提取生物锌,以锌和氨基酸的含量为指标,探讨了超声波细胞破碎的功率、料水比以及是否匀浆对近江牡蛎中生物锌提取率的影响.研究结果表明,采用超声波直接提取(未匀浆)的方式即可将牡蛎中的生物锌、部分氨基酸直接提取出来,结合实际生产需要,超声波破碎功率80W,料水比1:3(g/g),提取时间20min为最佳提取条件.该条件下提取的生物锌浓缩液中锌含量为66.0mg/L,氨基酸含量为206.13 mg/100mL.

In order to get the highly efficient way of extracting Zinc from Ostrea Rivularis Gould , the Zinc content and the total amino acid content were used as evaluating indicator to assess the products which were made by different power ultrasonic, different material usage ratio and homogenate or not. The result showed that ultrasonic cell disrupting (without homogenate) could extract Zinc and amino acid from Ostrea Rivularis Gould efficaciously, and the best extraction condition was ultrasonic power 80 W, material usage ratio 1 : 3(g/g), extraction duration 20 min. Under this condition, the Zinc content was 66.0 mg/L , while the total amino acid content was 206.13 mg/100 mL in the concentrated solution.
