对猴头菌(Hericium erinaceus)发酵菌粉进行了较全面的成分分析.结果表明猴头菌发酵菌粉中总蛋白、总氨基酸含量分别为27.63 %和18.13 %.菌粉中不饱和脂肪酸是优势脂肪酸,以亚油酸和油酸为主,还含有丰富的核苷类、酚类物质、多种矿质元素.粗多糖含量为11.2%,单糖组成为鼠李糖、阿拉伯糖、木糖、甘露糖、葡萄糖、半乳糖.菌粉中总酚含量为4.38 mg/g,总三萜含量为6.60 mg/g.
對猴頭菌(Hericium erinaceus)髮酵菌粉進行瞭較全麵的成分分析.結果錶明猴頭菌髮酵菌粉中總蛋白、總氨基痠含量分彆為27.63 %和18.13 %.菌粉中不飽和脂肪痠是優勢脂肪痠,以亞油痠和油痠為主,還含有豐富的覈苷類、酚類物質、多種礦質元素.粗多糖含量為11.2%,單糖組成為鼠李糖、阿拉伯糖、木糖、甘露糖、葡萄糖、半乳糖.菌粉中總酚含量為4.38 mg/g,總三萜含量為6.60 mg/g.
대후두균(Hericium erinaceus)발효균분진행료교전면적성분분석.결과표명후두균발효균분중총단백、총안기산함량분별위27.63 %화18.13 %.균분중불포화지방산시우세지방산,이아유산화유산위주,환함유봉부적핵감류、분류물질、다충광질원소.조다당함량위11.2%,단당조성위서리당、아랍백당、목당、감로당、포도당、반유당.균분중총분함량위4.38 mg/g,총삼첩함량위6.60 mg/g.
Components in fermented mycelia of Hericium erinaceus were analyzed. The results showed that contents of total proteins and amino acids of Hericium erinaceus mycelia were 27.63 % and 18.13 %, respectively. The unsaturated fatty acids including linoleic acid and oleic acid were the main fatty acids in the mycelia. The mycelia were rich in nucleosides, phenols, and various mineral elements. Content of crude polysaccharides in mycelia was 11.2 %. Polysaccharides were comprised of rhamnose, arabinose, xylose, mannose, glucose, and galactose. Contents of total phenol and total triterpenoids in the mycelia were 4.38 mg/g and 6.60 mg/g, respectively.
