利用索氏提取和薄层色谱分离技术,从市售红曲红中得到1种含羟基红曲红色素.该红曲红色素水溶液与马铃薯淀粉、玉米淀粉、小麦淀粉、红薯淀粉所形成悬浮物,扫描电镜、偏光实验结果表明红曲红色素在淀粉颗粒表面发生了物理吸附,且吸附作用没有改变淀粉的内部结构.落射荧光实验表明该红曲红色素荧光颜色为黄色或绿色,热台实验表明该色素不适用于220℃的加工条件.

A kind of red monascus pigment containing hydroxyl group was gotten by Soxhlet extraction and TLC separation technology from a commercially available red Monascus. The suspended substance were formed in the red monascus pigment aqueous solution and potato starch, corn starch, wheat starch, sweet potato starch. The scanning electron microscopy, polarizing experimental results showed that red monascus pigment was adsorbed on the starch granule surface by physical adsorption , and the adsorption process did not change the internal structure of starch. The results of EPI-fluorescence experiments indicated that the red monascus pigment fluorescence color was yellow or green , the results of hot stand experiments showed that the pigment must be used under to 220℃.
