For the purposes of exploring the most suitable extraction method of ginsenosides for industrial production currently and the substances which can effectively improve the bad properties of ginsenosides , the research progress of extraction methods and improvement methods of bad properties of ginsenosides were reviewed, and some problems that exist in the research and production were pointed out. This paper provided some references for the study and application in homology of medicine and food of ginseng.
