肌纤维是构成肌肉的基本单位,肌纤维的类型及组成决定着畜禽的生长发育和肉品质。畜禽在生长发育过程中肌纤维类型受品种、营养、日龄等因素的影响并发生转化,本文就肌纤维的类型及其转化对肉品质的影响,以及肌纤维相关基因对肉品质的影响进行了综述,为进一步深入研究肌纤维形成的分子机制提供参考。

Muscle fiber plays an important role in growth and meat quality in livestock and poultry as the primary part of muscle.The growth and development of the muscle fibers is directly affected by different species,diet nutrition and aninmal’s age.In this review,the influence of muscle fiber on meat quality and muscle types were summarized firstly. Then,the research in molecular mechanism of muscle fiber in meat quality was presented.In general,this rewiew could be helpful for further researching on molecular mechainsms of the formation of muscle fibers in the future.
