从HACCP实施原则和冷链物流流程入手,对各环节进行危害分析,确定关键控制点(CCP)及关键限值(CL),再制定监控与纠偏措施,完成HACCP的记录与验证.同时还针对HACCP的实施提出了加快物流设备、技术的信息化应用;建立产品追溯及食品安全管理信息平台;组建企业HACCP专家队伍;HACCP实施的制度化;建立健全HACCP绩效评价体系;对员工进行职业培训,提高员工忠诚度等六点保障措施.

In this paper, starting form the HACCP principle and the cold chain logistics process, we analyzed the hazards in the cold chain logistics process, determined the critical control points and the critical limits, and then formulated the supervisory and corrective actions to complete the HACCP recording and verification processes. Meanwhile, in view of the implementation of the HACCP system, we proposed six supporting measures to ensure the effectiveness of it.
