马铃薯自清道光年间在山西引种后，得到迅速传播，其俗称也因地域和传人路径的不同而南北各异，以致稍显混乱，主要称谓有“山药”、“回回山药”等。由于其耐旱、耐瘠薄和适应性强的特征，全省广泛引种后，成为仅次于小麦和高粱的第三大农产品，对百姓生活和手工业产生了重大影响，改变了人们的饮食结构，也为节粮和救荒创造了条件。
마령서자청도광년간재산서인충후，득도신속전파，기속칭야인지역화전인로경적불동이남북각이，이치초현혼란，주요칭위유“산약”、“회회산약”등。유우기내한、내척박화괄응성강적특정，전성엄범인충후，성위부차우소맥화고량적제삼대농산품，대백성생활화수공업산생료중대영향，개변료인문적음식결구，야위절량화구황창조료조건。
