报道了一种测定食品中亚硝酸盐的新方法。在酸性条件下,亚硝酸盐与联苯胺重氮化,再与盐酸萘乙二胺偶联生成蓝色产物,该产物在578nm处有最大吸收值,并由此建立了一种简单、快速、灵敏的亚硝酸盐测定方法。在优化实验条件下,亚硝酸根的浓度在0~0.8μg/mL范围内服从比尔定律,方法的检出限和表观摩尔吸光系数分别为7ng/mL和4.99×10^4L/(mol·cm)。本法用于测定各种食品如香肠、火腿、午餐肉、榨菜中痕量亚硝酸根的含量,结果与国标法一致。并对反应机理进行了讨论。

A rapid, simple, sensitive spectrophotometric determination of nitrite using new diazotizing and coupling reagents is described. The method is based on a diazotion-eoupling reaction between benzidine and hydrochloric acid naphthyl ethylenediamine in a hydrochloric acid medium. This increase in absorbanee is directly proportional to nitrite concentration obeying Beer' s law. Linear calibration graphs are obtained for 0 -0.8 μg/ml nitrite at 578nm. The molar absorptivity and the detection limit are found to be 4.99 × 10^4L( mol · com) and 7ng/mL. The method is applied to determine nitrite in sausage, ham, cured ham and pickle samples with satisfactory results. Finally, the mechanism of the reaction is discussed.
