针对“食品工程原理”课程特点和传统教学方法的局限性,将翻转课堂教学方法引入到食品工程原理“食品干燥”章节的教学中,并对该章节的教学方法和教学过程进行了设计。通过教学设计,包括教学法设计、学生课前预习、课上师生讨论、课后测试以及教学效果评估,拟提高食品工程原理的教学效果。
針對“食品工程原理”課程特點和傳統教學方法的跼限性,將翻轉課堂教學方法引入到食品工程原理“食品榦燥”章節的教學中,併對該章節的教學方法和教學過程進行瞭設計。通過教學設計,包括教學法設計、學生課前預習、課上師生討論、課後測試以及教學效果評估,擬提高食品工程原理的教學效果。

In view of the characteristics of "Principles of Food Engineering"and the limitation of its traditional teaching meth-ods, flipped classroom was introduced into the teaching of the chapter"food desiccation"of the course, and the teaching meth-ods and teaching process for the chapter were designed. Through teaching design, including teaching method design, students' pre-class preparation, teacher-student discussion in class, af-ter-class test and teaching effect evaluation, this paper intends to improve the teaching effect of the course.
