用90%乙醇提取八角茴香中的黄酮类化合物,通过 DPPH 法研究不同条件下八角茴香黄酮类化合物的抗氧化性能。结果表明,温度低于60℃,pH 3~6,自然光照5 d,八角茴香黄酮类化合物抗氧化性能稳定。抗坏血酸、丙酸钠、Fe2+可使八角茴香黄酮类化合物的抗氧化性能提高,抑制率分别提高17.26%、4.34%和12.04%。柠檬酸和 Mg2+使八角茴香黄酮类化合物的抗氧化性能降低,抑制率分别下降21%和21.29%,蔗糖、氯化钠、Cu2+、Zn2+对八角茴香黄酮类化合物的抗氧化性能影响不大。

용90%을순제취팔각회향중적황동류화합물,통과 DPPH 법연구불동조건하팔각회향황동류화합물적항양화성능。결과표명,온도저우60℃,pH 3~6,자연광조5 d,팔각회향황동류화합물항양화성능은정。항배혈산、병산납、Fe2+가사팔각회향황동류화합물적항양화성능제고,억제솔분별제고17.26%、4.34%화12.04%。저몽산화 Mg2+사팔각회향황동류화합물적항양화성능강저,억제솔분별하강21%화21.29%,자당、록화납、Cu2+、Zn2+대팔각회향황동류화합물적항양화성능영향불대。
Flavonoids were extracted from star anise by 90% alcohol. Antioxidation activity of flavonoids in star anise was studied by DPPH method in different condition. The result showed that antioxidation activity of flavonoids in star anise was stable when temperature was less than 60 ℃,pH was 3~6,natural light illumination was 5 d. Vitamin C,sodium propionatecan and Fe2+ could improve antioxidation ability of flavonoids in star anise,and inhibition rate improved 17.26%,4.34% and 12.04% respectively. Citric acid and Mg2+ could reduce antioxidation ability of flavonoids in star anise, and inhibition rate declined by 21% and 21.29% respectively. Sucrose,sodium chloride,Cu2+and Zn2+had a little effect on antioxidation ability of flavonoids in star anise.
