大豆油在储藏过程中极易氧化酸败,严重影响其食用品质和人体健康。重点综述了大豆油的化学成分及影响大豆油氧化变质的因素和氧化酸败的机制,论述了目前国内外一些控制与延缓大豆油酸败的方法和储藏技术,并展望今后大豆油储藏技术和天然抗氧化剂的应用。

Soybean oil,an essential food,provides calories and nutrients for the human body.Soybean oil is easily oxidized and rancidity during storage,which affect its quality and human health seriously.In the paper,the components of soybean oil,the mechanisms of oxidative rancidity and the factors influence oxidative deterioration in soybean oil are summarized.The current storage technologies and methods to control and delay soybean oil oxidative rancidity are also described at home and abroad in detail.The application of the storage technologies and the natural antioxidants for soybean oil are also discussed.
