蛋白质是一类最重要的生物大分子,在生物体内占有重要的地位,是生物功能的载体。蛋白质广泛存在于动植物体系中,大多数的蛋白质在动植物细胞内的含量极低。欲将蛋白质从生物体系中提取分离出来,同时保证蛋白质组成成分、结构性质和生物活性均不变,目前还存在较大的难度。本文根据蛋白质的性质特点,主要针对近几年蛋白质分离纯化的方法做了一个综述。

Proteins are one of the most important class of biological macromolecules in vivo, plays an important role, their biological function are carriers. Proteins are widely found in animal and plant systems, and most of the proteins are very low in animal and plant cells. There is still a great difficulty to extract proteins from the biological system and ensure that the composition, structure and biological activity of proteins were not changed. Based on the nature proteins characteristics, protein separation and purification methods in recent years were introduced.
