针对浓香型固态发酵白酒上甑蒸馏过程中存在的机械自动化水平低、出酒率不稳定的问题,设计研究了自动上甑装置,通过采用"三工位"转盘甑,两级传送带、打散器、摊平装置实现了酒糟的输送、打散、摊平,逐层均匀松散上甑.对不锈钢甑桶内壁嵌入一层木片,改善甑边效应.采用Fluent软件对不锈钢内壁有无木片两种情况进行蒸馏仿真分析,仿真结果表明,加了木片的蒸馏甑桶径向截面酒糟具有良好的升温同步性.采用本文设计的装置进行上甑蒸馏实验,结果表明,上甑蒸馏装置实现自动化上甑蒸馏,所获原酒质量比较稳定,提高了蒸馏的出酒效率.

In view of the problems in steamer distillation for Nongxiang Baijiu(liquor) by solid fermentation such as low level of automation and unstable liquor yield, automatic steamer distillation apparatus had been designed, which was composed of"three-position"rotary table re-tort, scattering device and paving device and could achieve the transportation, scattering, flattening, and loosing layer by layer of fermented grains. A wood layer was embedded in the inner wall of the stainless steel steamer, which could improve the distillation effects of steamer boundary. Then Fluent software was adopted for simulation distillation analysis of two distillation situations of stainless steel steamer (wood layer embedded or not). The results suggested that the steamer with embedded wood layer had good heating synchronization.The designed auto-matic steamer distillation apparatus was used in practice which could achieve automatic steamer distillation and the produced liquor had stable quality and liquor yield got improved as well.
