The traditional Daqu is the key factor to produce famous Baijiu(liquor) with special flavor. With the increasing improvement in mi-crobial taxonomic techniques, the exploration of microbial diversity structure of the traditional Daqu is of great significance in the research on the formation mechanism of Baijiu(liquor) flavor, and the optimization of Daqu production techniques. In this paper, the applicability of bio-chemical identification, gene library, DGGE etc. was introduced briefly. The efficiency and the suitability of mass spectrum, real-time PCR, high throughout sequencing etc. were also elaborated.
