董酒以小麦、大米及多种中药材制曲,以优质高粱为主要酿酒原料,用小曲酒固态发酵工艺制酒醅,经大曲长期发酵制得的香醅串蒸得酒,再经贮存勾兑而成.形成了董酒独特的香型和风格,它是我国董香型白酒的典型代表.本研究以大、小曲为研究材料,从小曲中分离出6株酵母菌,大曲中分离出7株细菌,通过TTC染色法初筛,再以CO2失重、酒精度、残还原糖等发酵性能指标来进行复筛,最终分别从大、小曲中各筛出1株发酵性能优良的酵母菌.

Dongjiu is produced as follows:wheat, rice and a variety of herbs used to produce the starter, quality sorghum used as main raw mate-rials, solid fermentation technology of Xiaoqu Baijiu(liquor) adopted, after long-term fermentation, cross-steaming with flavoring fermented grains, storage, and blending, product Dongjiu was finally obtained. The special aroma and styles of Dongjiu make it the typical representative of Dongxiang Baijiu(liquor) in China. In this study, Dongjiu Daqu and Dongjiu Xiaoqu were used as the research objects, and 6 yeast strains were isolated from Xiaoqu and 7 yeast strains were isolated from Daqu, after primary screening by TTC staining method, secondary screening was carried out by fermenting performance indexes such as CO2 weightlessness , alcohol and residual sugar etc. Finally, a quality yeast strain with good fermenting performance was isolated from Daqu and Xiaoqu respectively.
