Wet ultrafine grinding technology is a kind of new technology, which based on the superfine crushing technology. The application in fruits, vegetables, soybean and other food got a major breakthrough. The achievements of the technology filled the gaps in processing of fruit and vegetable and grain in China. In view of this, the paper introduced the peculiarity, types of equipment, working principles, the situation of the domestic and foreign development and the application in food processing of wet ultrafine grinding technology in detail. The development of its technology in the future were analyzed.
