Carrageen is a lyophilic colloid extracted from red algae of sea-plant. Due to its high water retention, carrageen is frequently used in pre-slaughtering pigs to increase the body water concentration, resulting in "glue injection meat". The illegal use of carrageenan in pig slaughtering and its harm to human health were analyzed in this paper. Moreover, advances in research of detection techniques for carrageenan was reviewed, including near infrared spectroscopy, fluorescence spectroscopy, low field nuclear magnetic resonance technology, and the combination of methylation and reversed phase high performance liquid chromatography technology.
