建立了测定食用醋中特征风味物质双乙酰、异丁酸含量的顶空气相色谱法。双乙酰、异丁酸在加热下挥发,经顶空自动进样器后用气相色谱-氢火焰离子检测器( GC-FID)检测。双乙酰和异丁酸分别在0.000~100.0μg/mL及0.000~500.0μg/mL范围内有良好的线性关系,相关系数0.9995和0.9999,在食用醋中的添加回收率分别为双乙酰:95.7%~98.2%,异丁酸:96.7%~97.2%,对应的相对标准偏差为双乙酰:1.88%~2.42%,异丁酸:1.50%~2.35%。双乙酰检出限为0.15μg/mL,定量限为1.5μg/mL;异丁酸检出限为1.5μg/mL,定量限为5.0μg/mL。该方法简单、快速、准确,适用食用醋中双乙酰、异丁酸的含量检测分析。

Determination method of the flavor characteristics of 2 ,3-butanedione and isobutyric acid in vinegar by head-space gas chromatography (HS-GC) was established. 2,3-butanedione and isobutyric acid were determined by HS-GC with FID detector after heating evaporation. The pretreatment method was optimized and the method was used to determine 2 ,3-butanedione and isobutyric acid in vinegar. The method was verified by linear regression ( 0. 9995 ) for 2 ,3-butanedione within 0. 000 ~ 100. 0 μg/mL and ( 0. 9999 ) for isobutyric acid within 0. 000 ~ 500. 0 μg/mL. Recovery test for 2 ,3-butanedione was 95. 7% ~98. 2% and isobutyric acid was 96. 7% ~97. 2%. RSD of the method for 2,3-butanedione was 1. 88% ~2. 42% and isobutyric acid was 1. 50% ~2. 35%. , LOD for 2,3-butanedione was 0. 15 μg/mL and isobutyric acid was 1. 5 μg/mL. LQD for 2,3-butanedione was 1. 5 μg/mL and isobutyric acid was 5. 0 μg/mL. The determine method was robust, quick, accuracy and simple for widely used in testing of 2,3-butanedione and isobutyric acid in vinegar.
