对检测食品中大肠菌群快速检测纸片法进行研究。结果表明,经过对培养基中显色剂和冷水凝胶成分的优化,培养基中氯化三苯四氮唑的浓度为0.4 mg/L时,试纸片显色效果最好,形成的菌落数较多;同时研究冷水凝胶对大肠菌群生长的影响,当冷水凝胶浓度高于或低于0.7%时,大肠菌群生长速度减慢。采用国标法和纸片法检测市售的8种食品,本试纸片法与国家标准方法检测结果一致,纸片法的特异性和重复性较好。

대검측식품중대장균군쾌속검측지편법진행연구。결과표명,경과대배양기중현색제화랭수응효성분적우화,배양기중록화삼분사담서적농도위0.4 mg/L시,시지편현색효과최호,형성적균락수교다;동시연구랭수응효대대장균군생장적영향,당랭수응효농도고우혹저우0.7%시,대장균군생장속도감만。채용국표법화지편법검측시수적8충식품,본시지편법여국가표준방법검측결과일치,지편법적특이성화중복성교호。
Test strip for rapid detection of total colonies and coliform bacteria in food was studied in this paper. The results showed that the developing color of test strip was best when the concentr-ation of TTC was 0.4 mg/L after optimization of color-developing agent and the cold water gel com-ponent. The concentration of cold water gel can affect the growth of col-iform bacteria, and when the concentration is higher than or less than 0.7%, the bacterial growth rate slowed down gradually. Eight kinds of food were tested by the GB method and test strip, and results showed that there was a high similarity be-tween the test strip method and GB method. In addition, the specificity and reproducibility of test strip were very good.
