为了探讨陶瓷膜超滤设备在桑果、桑叶、金银花复合澄清饮料生产上的应用效果,研究了不同孔径陶瓷膜柱对桑果中多糖和蛋白质的截留效果。结果表明,200 nm陶瓷膜柱对多糖的截留率为14.96%,对蛋白质的截留率为26.98%;20 nm陶瓷膜柱对多糖的截留率为22.99%,对蛋白质的截留率为98.41%,因此认为20 nm陶瓷膜柱更有利于多种原料复合果汁饮料的澄清。并利用正交试验筛选出最佳饮料配方为桑果汁20%、桑叶汁30%、金银花汁10%,制作出了符合要求的桑果、桑叶、金银花复合澄清饮料。

The cut-off effects of different size ceramic membrane on polysaccharide and protein in mulberry juice were studied. The results showed that 14.96% polysaccharide and 26.98% protein were removed by ceramic membrane with 200 nm pore size, while 22.99% polysaccharide and 98.41% protein were removed by ceramic membrane with 20 nm pore size, so it is better that using ceramic membrane with 20 nm pore size to clarify the mixed juice with various materials. The optimum for-mula of this compound clarified beverage of fine quality was also selected by orthogonal experimental method, which consisted of 20% of mulberry fruit juice, 30% of mulberry leaf juice, and 10% of honeysuckle juice.
