研究旨在应用酶法提取咖啡果皮中膳食纤维,为高品质膳食纤维提取及产业化开发应用提供参考。单因素及响应面优化纤维素酶法提取咖啡果皮中可溶性膳食纤维的工艺条件,并对其功能特性进行分析。结果表明:纤维素酶法提取的最优提取工艺为:超纯水(V )∶咖啡果皮粉(m)=100 mL∶6 g,纤维素酶活添加量为22 FPU/mL,酶解温度40℃,酶解时间2 h,在此工艺条件制备可溶性膳食纤维得率为9.72%;其持水力为(35.72±0.33)g/g,溶胀力为(94.85±0.23)mL/g,结合水力为(26.97±0.54)g/g。

연구지재응용매법제취가배과피중선식섬유,위고품질선식섬유제취급산업화개발응용제공삼고。단인소급향응면우화섬유소매법제취가배과피중가용성선식섬유적공예조건,병대기공능특성진행분석。결과표명:섬유소매법제취적최우제취공예위:초순수(V )∶가배과피분(m)=100 mL∶6 g,섬유소매활첨가량위22 FPU/mL,매해온도40℃,매해시간2 h,재차공예조건제비가용성선식섬유득솔위9.72%;기지수력위(35.72±0.33)g/g,용창력위(94.85±0.23)mL/g,결합수력위(26.97±0.54)g/g。
The aim of enzymatic method extract coffee peel soluble dietary fiber was to provide reference of high quality dietary fiber industrialization development. Single factor and response surface methodology as an approach to optimize the extraction technology of coffee peel soluble dietary fiber, while their functional characteristics were briefly analyzed. The results showed that: the optimum extraction process of cellulase extraction was as follows: ultrapure water (V )∶coffee peel powder (m) =100 mL∶6 g, cellulose enzyme activity adding amount was 22 FPU/mL, enzyme solution temperature was 40℃, enzyme solution time was 2 h, in this process condition the coffee peel soluble dietary fiber yield was 9.72%. The functional characteristics was as follows:retention ability yield was (35.72±0.33) g/g, swelling force yield was (94.85±0.23) mL/g, bound moisture force yield was (26.97±0.54) g/g.
