乳粉的溶解度直接影响乳粉的品质,乳粉溶解度是指一定量的水与乳粉混合后,能够恢复成均一的牛乳状态的性能,乳粉溶解度的高低可以直接反应蛋白质的变性程度,用水冲调使其复原时,产品应呈均一稳定的鲜乳状态,其中牛乳中的各种营养成分也能恢复成乳原来的良好分散状态.在喷雾干燥过程中的控制参数会影响乳粉中的营养成分和品质,所以喷雾干燥的参数设置对于乳粉品质和冲调性至关重要.但喷雾干燥各参数之间存在相互作用,为了确定各因素对乳粉溶解度的影响,在本章中以不溶度指数为衡量指标,对干燥后的乳粉进行检测分析.
