酸性α-淀粉酶是指在低 pH 值条件下可保持高活性，通过随机切断分子内α-1，4糖苷键，将淀粉降解为糊精和低聚糖等的一种重要工业酶制剂。本文对酸性α-淀粉酶产生菌的来源、高产菌株选育、产酶条件优化及应用潜力进行了综述，为进一步研究酸性α-淀粉酶提供参考借鉴。

Acid-stable α-amylase with high catalytic activities at low pH can randomly cleave the α-1,4-glyco-sidic linkages in starch,generating dextrin and oligosaccharide.In this paper,we reviewed the source of the pro-duction strain,breeding of the high-producing strain,optimization of the fermentation condition and application po-tential of this enzyme.
