Electronic tongue/electronic nose technology is a simulation technology. In this paper, the basic principles and the pattern recognition methods of electronic tongue/electronic nose technology were introduced. The research on/application of electronic tongue/electronic nose tech-nology in Baijiu(liquor), yellow rice wine and grape wine were discussed in the fields of flavor analysis, discrimination of the producing places of the products, differentiation of varieties, authenticity identification of the products, and product age discrimination etc.
