目的:研究比较新疆地区8种蜂蜜中果糖、葡萄糖、蔗糖、麦芽糖的含量,以评价其质量。方法依据国标检测方法(GB/T18932.22-2003)并依据文献加以改进。采用 Waters carbohydrate high performance(4.6 mm×250 mm,4μm)色谱柱,乙腈:水(75:25,V:V)为流动相,流速:1.0 mL/min,柱温:35℃,检测器为示差折光检测器,进样量为10μL。结果混标及蜂蜜样品中的果糖、葡萄糖、蔗糖和麦芽糖在10 min内均达到基线分离,加样回收率为98.6%~102.6%,相对标准偏差(RSD)为1.5%~2.6%,有7种蜂蜜中果糖、葡萄糖含量均大于30%,蔗糖含量低于2%。结论该方法与国标检测方法相比具有灵敏度高,分析时间短,结果准确可靠,适用于蜂蜜中单糖的快速分析和质量控制。

Objective To study the determination of content of fructose, glucose, sucrose and maltose in honey to judge whether the sugar amount in honey is accord with the national standards.Methods Based on GB/T18932.22-2003 and literature, the separation was carried out on waters carbohydrate chromatographic column (4.6 mm×250 mm, 4μm), mobile phase was acetonitrile-water (75:25,V:V), and the flow rate was 1 mL/min. The column temperature was 35℃ , and the detector was RID with an injection volume of 10μL. Results The fructose, glucose, sucrose, and maltose were separated under the optimized conditions within 10 min. The average recoveries (n=6) were 98.6%~102.6% with RSD of 1.5%~2.6%. The result showed that the content of fructose and glucose were more than 30% and sucrose was lower than 2% in 7 kinds of honey. Conclusion The method is simple rapid, sensitive and cheap for directly determining honey without any complicated and time-consuming separation process. It can be applied for the rapid analysis and quality control of sugar in honey.
