铝在自然界中是一种常见的金属元素,在毒理学上属于低毒性的金属元素,可通过食品进入人体,影响体内的多种生化反应,导致一些疾病的发生。明矾等含铝食品添加剂,在膨化食品、面制品等食品中经常被检出,但淀粉制品中铝含量的检测少见报道,应引起监管部门的重视。国标法面制品中铝含量测定,采用湿法消解处理样品,这种方法存在消化时间长、消化终点不易掌握、残留的高氯酸不易赶尽的缺点,从而干扰吸光度值、影响测定结果的准确性。本文采用干法灰化法处理样品,结合分光光度法,应用于淀粉制品中铝含量的测定,获得了良好效果。

Aluminium is the usual metallic element in nature, and it is ranged into harmfulless metallic element. It can enter into human body with food together, through taking part in some biochemical reaction then lead to illness. Food additives such as alumen frequently be detected in Flour product or Puffng Food and seldom seen of detection report on starch-based product, so supervisory board should pay close attention to it. While there is several disadvantages on the test method with wet digestion in national standard, such as digestion time, end point, remain perchloric acid etc. This pater gives a method of dry ashing, integrate with spectrophotometry, can be applied on starch-based product alumen detection , and aquire good results.
