翻译中餐菜名时,译者会遭遇由于目的、文化、语言的差异而造成的困难。面对中国走出去的大背景,中餐菜名的翻译应不仅仅是让食客了解菜品的基本信息,更多地应着眼于让其通过菜名了解中国饮食文化。因此纯写实性的菜名翻译已不能满足要求。而文化、语言的差异更使得单纯的直译或意译的方法显得单薄,因此要解决这些差异问题,就需要遵循“连贯、忠实”法则,灵活运用多种方法,包括音译、直译、意译、释译、加注。

In the translation of Chinese dish names, difficulties may emerge due to differences between purposes, cultures and languages. In the context of “China walking out”, translators should put more emphasis on the interpretation of the cultural element in the dish names than the supply of the basic information of dishes. Thus, realistic translation is not enough. Moreover, the gaps between cultures and languages make single way ineffective. That is, it is better to follow Coherence Rule and Fidelity Rule, apply flexibly multiple ways to translate the dish names by using interpretation, transliteration and literal translation.
