该文首先以乳化液稳定性、黏度和包埋率为指标,从β–环糊精、大豆分离蛋白等7种壁材中筛选出3种作为打瓜籽油中不饱和脂肪酸的包埋壁材,然后利用混料设计优化三种壁材的配比。结果表明:以大豆分离蛋白70.7%、麦芽糊精29.3%进行复配,采用芯壁比1∶3,乳化剂(1.0%,蔗糖酯∶单甘脂=4∶1)进行三次包埋验证试验,平均包埋率为87.43%±1.07%,与模型预测值(88.67%)高度吻合。

In this paper,the emulsion stability,viscosity and the embedding rate as the index,seven shellmaterials which includedβ–cyclodextrin,soy protein isolated and soon,were screened for embedding unsaturated fatty acidsof seed–watermelonoil,and then basedon themixture design, the ratioofcomplex shellmaterial was determined.The results showed that the averageof embedding rateof three parallel experiments was 87.43%±1.07% with the soybean separation protein 70.7%, maltodextrin 29.3%,the ratioofoil and shellmaterial 1∶3,emulsifier(1.0%,sucrose ester:monostearin= 4∶1),which was in substantial agreement with the predicted value(88.67%).
