对茶皂素的脱色进行研究,采用三种方法进行脱色,实验结果表明,H2O2的脱色效果最为明显。通过正交试验,得出其最佳脱色条件:脱色温度为65℃,脱色时间120 min,PH为9,加入H2O2的量为茶皂素总量的3%。并对自制茶皂素脱色前后做了Cu2+,Fe3+的含量分析,实验结果表明,茶皂素的颜色与产品中的杂质有关,所以应避免产品中带入金属离子。

Three methods to decolor tea saponin were studied and the effect of H2O2decolorization was the most obvious. The optimum condition of decolorization by orthogonal test was: temperature 65℃, time 120 min, pH =9, 3% content of H2O2 was 3%. Furthermore, the results of using the Cu2+and Fe3+ of decolorization show that the colour of tea saponin is determined by the impurity in the product, it means that in the processing of tea saponin, the metal ion getting into the product should be avoid of.
