采用热水浸提、乙醇醇沉法从鸡油菌中提取多糖,测得鸡油菌多糖含量为7.93%。测定了鸡油菌多糖对超氧自由基负离子(O2·-)及羟基自由基(·OH)的清除作用,以此来评价鸡油菌的抗氧化活性的能力。鸡油菌多糖对羟基自由基的清除率为68.2%,对超氧自由基负离子的清除率为65.3%。

The polysaccharide in cantharellus cibarius was obtained by hot water extraction and ethanol deposit. The content of polysaccharide was 7.93% by spectrophotometer. The antioxidant activities of polysaccharide were studied. Percentage clearance of the superoxide radical (O2·-) was 65.3%, and percentage clearance of the hydroxyl free radical (·OH) was 68.2%.
