Food Carving based on working process ,a core course for students of Cooking Technology and Nutri-tion,plays an important role in fostering students 'aesthetic abilities in cooking .This article explains the course ' design and practice from the following four aspects:objectives,philosophies of situation design ,organization and implementation ,and teaching assessment and evaluation .
