以破壁灵芝孢子粉为对象,采用喷雾干燥法研究了孢壁重塑的灵芝孢子粉制备技术,并进行了产品分析。结果表明,以羟丙甲纤维素和大豆分离蛋白为复合壁材,优选比例为2∶1,壁材与芯材比例为2∶1;固形物浓度为30%;重塑工艺参数为均质压力为40 M Pa ,均质次数2次,喷雾干燥进风温度220℃,出风温度105℃,孢壁重塑率为90.2%;制备的产品分散性好,抗氧化性强。
以破壁靈芝孢子粉為對象,採用噴霧榦燥法研究瞭孢壁重塑的靈芝孢子粉製備技術,併進行瞭產品分析。結果錶明,以羥丙甲纖維素和大豆分離蛋白為複閤壁材,優選比例為2∶1,壁材與芯材比例為2∶1;固形物濃度為30%;重塑工藝參數為均質壓力為40 M Pa ,均質次數2次,噴霧榦燥進風溫度220℃,齣風溫度105℃,孢壁重塑率為90.2%;製備的產品分散性好,抗氧化性彊。
이파벽령지포자분위대상,채용분무간조법연구료포벽중소적령지포자분제비기술,병진행료산품분석。결과표명,이간병갑섬유소화대두분리단백위복합벽재,우선비례위2∶1,벽재여심재비례위2∶1;고형물농도위30%;중소공예삼수위균질압력위40 M Pa ,균질차수2차,분무간조진풍온도220℃,출풍온도105℃,포벽중소솔위90.2%;제비적산품분산성호,항양화성강。
Technology and product were put forward in this paper ,for remodeling wall of Ganoderma lucidum spores based on spray drying process .The results showed that :the hydroxypropyl methyl cellulose and soy protein isolates were selected as composite wall material ,optimal ratio of hydroxypropyl methyl cellulose and soybean protein isolates was 2∶1 ,ratio of wall material and core material was 2∶1 ,and solids concentration was 30% .The processing parameters and product characteristics were as follows :homogeneity pressure was 40 MPa ,homogeneity times was 2 ,inlet air temperature was 220 ℃ and outlet temperature was 105 ℃ ,percent of remodeled spores wall was 90 .2% ,and the product had good dispersivity and strong anti‐oxidation .
