随着生活节奏的加快,选择快餐厅用餐的人越来越多,其食品配餐合理与否直接影响点餐率,所以快餐厅的食品搭配,成为行业利润提升的关键. 运用数据挖掘理论,借助IBM SPSS Modeler建立消费数据流,构建食品网络图模型,确定阈值,应用Apriori算法,确立食品关联规则,形成食品配餐方案,并以某西式连锁D快餐厅为例进行应用分析,证明数据挖掘技术在食品配餐应用中很有成效,也可以为其他行业运用数据挖掘技术提供借鉴与帮助.

Since more and more people tend to eat in snack bars as the pace of life quickens, appropriate food catering directly affects the rate of ordering and has become a key to enhance the profit margin.The thesis ap-plies the data mining theory to analyzing consumption data and constructs food catering network model with da-ta flow produced by IBM SPSS Modeler.Then with the determined threshold, the thesis establishes the food association rules with the use of Apriori algorithm and forms a new scheme for food catering.Moreover, the ar-ticle analyses the example of D, a western chain of snack bars and has proved the effectiveness of data mining techniques, which also provides reference for other sectors.
