以酸枣果肉为原料,利用化学法提取不溶性膳食纤维( IDF)。在单因素实验基础上采用正交实验研究A ( NaOH浓度)、 B (料液比)、 C (提取温度)、 D (提取时间)对IDF得率的影响。结果表明,对IDF得率的影响大小为A>C>B>D; IDF最佳提取工艺参数为温度50℃,料液比1︰5 g/mL, NaOH浓度3%,时间40 min, IDF得率可达37.9%,产品为淡黄色粉末,持水力、持油力、膨胀率分别为3.5867 g/g、2.3906 g/g和22.2 mL/g。

Taking the Ziziphus jujuba var.spinosa as raw material, to extract insoluble dietary fiber ( IDF) .Based on the single factor experiment, orthogonal experiment on influence of A ( NaOH concentration) , B ( the ratio of to liquid) , C ( extraction temperature) and D ( extraction time) on the yield of insoluble dietary fiber from the Ziz-iphus jujuba var.spinosa was processed.The results showed that the impact of these factors on the yield of dietary fiber extracted from Ziziphus jujuba var.spinosa was A>C>B>D;the optimum extraction process of insoluble dietary fiber was:temperature of 50℃, ratio of material to liquid 1︰5 g/mL, 3 %NaOH concentration, 40 min.Un-der the optimized condition, yield of the insoluble dietary fiber could up to 37.9 %, the production was a powder with light yellow color, and its water holding capacity, oil absorption capacity, and expansion rate were 3.586 7 g/g, 2.390 6 g/g and 22.2 mL/g respectively.
