探究马铃薯淀粉的最佳提取工艺,比较榆林市不同产地马铃薯淀粉的含量。通过单因素实验对影响马铃薯淀粉提取率的因素进行考察,并在此基础上设计正交实验,得出最佳提取工艺条件。然后应用旋光法比较榆林地区主要产地的马铃薯中淀粉的含量。结果表明,提取的最佳条件:料液比为1:5 g/ mL,pH 为6.0,浸泡温度25℃,浸泡时间3.5 h。影响马铃薯淀粉提取率的主次顺序为料液比>浸泡时间>浸泡温度> pH 值。几个主要产区的马铃薯的淀粉含量:靖边县最高,榆阳区最低。榆林地区不同产地的马铃薯淀粉含量存在不同程度的差异,主要与土壤类型有关。

To explore the optimum conditions of extraction potato starch from Yulin of different areas and then to compare their starch content. The effect of single factor on the extraction rate of potato starch was observed and an orthogonal experiment L9(34 )was conducted on the base of the single factor experiment, then compared content of starch in potato from different areas by polarimetry. Results showed that the best technology for the extraction of the strach in potatoes is that the feed liquid ratio is 1 : 5(g / mL),the pH of solution is 6. 0,immersing temperature is 25 ℃ and immersing for 3. 5 h. The impact of various factors on the extraction rate of starch is that solid-liquid ratio > immersing time > immersing temperature > pH value. By comparison of the main growing areas of potato of Yulin city the highest potato starch content is from Jingbian country and the lowest from Yuyang area. The content of potato starch from different areas of Yulin city has difference in different degrees as different type of soil.
