A RN-820 rice freshness tester was used to determine the rice freshness through dyeing and pH determination. The method was simple and easy to determine the rice quality. The principle , characteristics and real sample application of the RN-820 rice freshness tester were described. The advantages and disadvantages of the method to make the evaluation , and its development prospect were put forward.
