随着杂粮面条主食化的发展,杂粮在面条中的应用成为研究热点。面条是中国的传统主食之一,杂粮面条不仅营养丰富,而且具有一定的保健功能。针对目前中国荞麦、燕麦、大麦、豇豆、绿豆、黑豆、糙米、小米及黑米等杂粮面条的研究现状进行了综述。以期为中国杂粮面条主食化提供一些参考。
隨著雜糧麵條主食化的髮展,雜糧在麵條中的應用成為研究熱點。麵條是中國的傳統主食之一,雜糧麵條不僅營養豐富,而且具有一定的保健功能。針對目前中國蕎麥、燕麥、大麥、豇豆、綠豆、黑豆、糙米、小米及黑米等雜糧麵條的研究現狀進行瞭綜述。以期為中國雜糧麵條主食化提供一些參攷。

With the development of the staple food industrialization, grain noodles has also become a research hotspot. Noodle is one of the Chinese traditional staple food. Grain noodles are rich in nutrients and bioactive components. We made a review on the application in noodles of buckwheat, oats, black beans, mung beans, cowpea, black rice, brown rice and millet, which will provide some reference for the noodles industrialization of grains.
