将粒度为9XX ／11XX、11XX ／13XX、13XX ／－三种小麦粉进行混合配比，研究混合粉的理化、流变学、糊化、发酵特性以及老酵馒头的品质。结果表明：当11XX ／13XX 粒度的小麦粉质量分数为40％时，其他两种粒度质量分数均为30％时，发酵时间50 min，制作的馒头品质最佳。
將粒度為9XX ／11XX、11XX ／13XX、13XX ／－三種小麥粉進行混閤配比，研究混閤粉的理化、流變學、糊化、髮酵特性以及老酵饅頭的品質。結果錶明：噹11XX ／13XX 粒度的小麥粉質量分數為40％時，其他兩種粒度質量分數均為30％時，髮酵時間50 min，製作的饅頭品質最佳。
장립도위9XX ／11XX、11XX ／13XX、13XX ／－삼충소맥분진행혼합배비，연구혼합분적이화、류변학、호화、발효특성이급로효만두적품질。결과표명：당11XX ／13XX 립도적소맥분질량분수위40％시，기타량충립도질량분수균위30％시，발효시간50 min，제작적만두품질최가。
Three particle sizes of wheat flour,9XX /11XX,11XX /13XX,13XX /-,were blended to re-search its properties of physicochemical,rheological,gelatinization,fermentation and the quality of the steamed bread.The results showed that when the mass fraction of the flour with particle size of 11XX /13XX was 40%,the mass fraction of other two were 30%,the quality of steamed bread was the best with fermentation time 50 min.
