Meat production and quantity of yak is an important aspect which effect the yak industrialization development and yak products to high-end market.Through contrast analysis among different yak meat from different age/regional/varieties yak,and between yak meat and other varieties beef,this paper expounds the yak meat yield and quality characteristics which include nutritional quality,processing quality,edible quality and sanitary quality.It conclude that yak meat has rich nutrition,no pollution characteristic,but meat production and food processing varieties quality is lower than other cattle.
